Selection of MilkThe process starts with the selection of milk from indigenous Desi cows, preferably of the A2 milk variety. These cows are known for producing milk with a higher content of A2 beta-casein protein, which is believed to have numerous health benefits. |
Curd FormationThe selected milk is allowed to naturally ferment to form curd. This curd is typically cultured using traditional methods, without the use of commercial starters or additives. The curd is then churned using a wooden churner called a bilona. This churning process helps separate the butterfat from the liquid portion of the curd. |
Butter ExtractionThe churned curd is then hand-whisked vigorously until the butterfat separates from the buttermilk. This butterfat is collected and further processed. The collected butterfat is gently heated in a traditional vessel until it melts and clarifies. During this process, the impurities are skimmed off, leaving behind pure clarified butter, known as ghee. |
Purification and PackagingThe clarified butter (ghee) is then filtered to remove any remaining impurities, ensuring a smooth and pure texture. Finally, the ghee is allowed to cool down before being packaged into containers, preserving its freshness and aroma. |

Our legacy began in 1982, amidst the rising tide of Dalda ghee and concerns about adulterated dairy, our founder, Pandit Ved Prakash Sharma, witnessed these anxieties firsthand among customers at his father’s Pandit Roshan tea stall. Thus, Roshan Dairy was born, a beacon of dairy integrity. Panditji, as he was affectionately known, poured his heart and soul into learning and delivering his craft. His unwavering dedication and commitment to exceptional quality soon saw Roshan Dairy’s products transcending city limits, gracing homes in Narnaul, Bhiwadi, and Mahendragarh. His passing marked the end of an era. Still, the story of Roshan Dairy, penned by his unwavering determination, continues to unfold with a worthy custodian in his son, Mr. Prashant Bhardwaj. Under Mr. Bhardwaj’s astute leadership, Roshan Dairy embarked on a grand expansion, spreading its wings across Haryana. A state-of-the-art dairy processing unit in Bawal became the beating heart of this endeavor. Mr. Bhardwaj has achieved this extraordinary feat without spending a single rupee on advertising.
